VSDC is excited to announce our upcoming online cooking class with Dr. Ruby Lathon, as part of our Eating Vegan series. The online vegan cooking demonstration is on Saturday, December 11th, from 11 am to 1 pm.

Dr. Ruby is an award-winning engineer turned certified holistic plant-based nutritionist and wellness consultant after her own journey battling cancer. As a chef, she is now offering prepared delicious organic vegan food through her meal delivery service and pop-ups in the DMV area and Albuquerque (www.RubyRedsVegan.com) – also a VSDC Green Rewards member. She will be guiding us in making three of her fabulous fall recipes, then answering our questions. In this class, Ruby will show us how to make a baked classic sweet potato pie with coconut cream and also a recipe for a vegan ‘crab’ dip.
(We will plan another class to exercise New Year’s resolutions where Ruby will demo a string bean casserole and also vegan energy bars on Sat, Jan 15th.)
The recipe for this class will be sent by Thu Dec 9th, so you can prepare and cook along if you like. The link to the zoom session will be included as well.
The fee for this class is only $20 per person (and full VSDC members will get a bonus – we will add 3 months to your membership!). We will plan for a max of about 25 attendees so please RSVP ASAP. It’s first-come, first-serve, payment will be required in advance, and sorry but no refunds will be possible. Proceeds from these classes will benefit Dr. Ruby and her important work to promote a healthy vegan diet and lifestyle.

Dr. Ruby Lathon is a certified holistic nutritionist, wellness coach and an advocate for the life-saving benefits of plant-based (vegan) nutrition. Dr. Ruby inspires with a powerful story of recovering from thyroid cancer through alternative treatment focused on a whole foods, plant-based diet. Dr. Ruby worked as a researcher and an award winning engineer, and now teaches others how to re-engineer their health and live disease free.
Dr. Lathon earned a Ph.D. and M.S. in Industrial and Systems Engineering, from the University of Alabama in Huntsville, and a B.S. in Computer Science from Oakwood University. Dr. Lathon received her nutrition training and certification at the Washington Institute of Natural Medicine. Dr. Lathon served as Nutrition Policy Manager at the Physicians Committee for Responsible Medicine, where she developed and led a national grassroots campaign to advocate legislation for more healthful, plant-based meal options in the National School Lunch Program. Dr. Lathon is host of The Veggie Chest, an online, plant-based cooking show and is featured in the documentary, What the Health. Through her organization, Roadmap to Holistic Health, Dr. Lathon hosts health conferences, workshops and vegan cooking classes and provides customized nutritional consultations and coaching programs.
